Beer Battered Onion Rings

Is it Friday yet? This week has already been packed with lots to do. Baseball seems like it consumes my life these days. With 3 boys, they live and breathe sports. Little League this year has been fun. My oldest is on a traveling team and then another separate team. The middle one gets to play one game this coming Monday and the youngest just had practices since he is just learning the fundamentals. Soon enough we will be onto the next sport. 

I can’t believe it’s already July. Seems like Summer just began, but yet I don’t feel like I have a whole heck of a lot accomplished. Well honestly, I don’t know if I have a whole heck of a lot to accomplish. And I don’t know if that is a good thing or a bad thing. Can people feel like they have no time, but yet don’t really have a schedule full of things to do? Must be the job.

I do know that one thing I WILL accomplish this summer is going to the Minnesota State Fair. It is kind of a big thing here. I haven’t been in quite a few years but every year I download their food list and drool. I also make a list of foods that I have my dad bring back for me and the kids since he is a yearly attendee. I love State Fair onion rings and cheese curds. So obviously I had to try to recreate the beer battered goodness that makes the delectable!

Ingredients:

Batter:
1/2 (6 oz) can beer
3/4 tsp baking powder
1/2 cup all-purpose flour
1 egg, lightly beaten
1/2 tsp salt

2 large onions, sliced in rings and separated
1/2 cup flour
Oil for frying

Directions:

Pre-heat oil to 350. In medium bowl whisk together your egg and beer. In another bowl combine your baking powder, flour and salt. Slowly whisk in your beer mix, making sure to get all lumps out. Place your 1/2 cup of extra flour in shallow bowl. Dredge onions in flour, dip in batter then fry in oil until golden. Repeat in batches until all are done. Serve with favorite dipping sauces and enjoy!
