I hope everyone had a happy and safe 4th of July weekend! We didn’t do much. We went to a parade on Saturday then to my parents house for some snacks and to shoot off fireworks with the kids. Sunday involve relaxing and taking my oldest to get some Chinese food. Quiet and pretty uneventful, sort of like we like it.
I’m a big fan of easy week night dinners. Having 4 kids, it gets hard to prepare the big meals all the time. With sports and activities I’m always looking for something that I can prepare quick and without much work. These Totchos match that bill! I love tacos, I love nachos and I love tater tots. These combine all 3! Besides being kid friendly, these are very very adult friendly as well.
These can be adapted to your liking. Adding or removing any of the ingredients as toppings. I added guacamole to mine, but my husband doesn’t like guac. He doesn’t really like tomatoes either but I think if I keep adding them to my dishes he will learn to love them! Luckily they were big enough to pick off that if the picky man didn’t want to endure them he had to option to not. So if you’re in a time crunch but want something with big flavor, this is your meal.
Ingredients:
1 bag tater tots
1 lb ground beef
1 pkg taco seasoning
Nacho cheese sauce (recipe to follow)
Sour cream
Chopped black olives
Diced tomatoes
Additional desired toppings
Nacho Cheese Sauce:
2 tbsp butter
2 tbsp flour
1 cup milk
2-3 dashes of hot sauce
2 cups sharp cheddar cheese, shredded
Directions:
Make tater tots according to package directions. In pan, cook ground beef until no longer pink, drain. Add taco seasoning to beef and stir around.
To make nacho cheese sauce, in pot on medium-high heat melt butter. Once melted whisk in your flour until a paste is created. Slowly whisk in milk and reduce heat and let simmer until sauce thickens. Once thickened stir in your cheese and hot sauce, stir until melted and combined.
In serving dish add your tator tots and ground beef mix, toss together to combine. Drizzle your nacho cheese sauce over top. Top with your olives, sour cream, tomatoes and any additional toppings of your choice. Serve and enjoy!

Blending tater tots and nachos seems like an amazing combination. I just pinned this and will be trying it soon. I’m sure my husband and I will say “Give me some of your tots man” at least a thousand times throughout dinner.
