Bacon Caramel Roll Bread Pudding

Another Happy Monday to you all. I hope everyone had an amazing weekend. And to all you wonderful fathers out there I hope you had an awesome Father’s Day! Just seeing what everyone was planning on making for Father’s Day absolutely had my mouth-watering all weekend. So jealous of some of you men out there!

Our weekend was quiet, Saturday we went shopping and got some groceries and Sunday my husband took our 3 boys fishing while he left me and our daughter home to do our girl stuff. Which pretty much consists of my daughter going up down up down on literally every surface that is climbable in our house. This child does not stop! Whatever energy you have this child sucks it all out and uses it for herself that’s how go go go she is. Almost need a vacation just to wind down from her adorable need to explore everything.

Speaking of vacations! My husband and I visited the fabulous Las Vegas in April. Boy is there a lot to see in that city! It is so full of life and very very visually stimulating. I thought being there for 5 days was going to give us enough time to see everything, yup I was wrong. Luckily like the little planner that I am I had a list of things I wanted to see, eat and do. Finally after one day I had to seriously narrow it down to the MUST DO because I soon realized how much two people can cover in 24 hours.

One thing on my list of course was to visit a buffet. Now for about 6 weeks leading up to the trip I was playing the myVegas app on my phone (highly recommend) to earn up points to get discounts on things to do. I had earned up enough points to get a BOGO free buffet at one of the Hotels. After literally viewing all our options, even as far as going and watching youTube videos on them, I finally decided on the buffet at the Aria. So happy with my choice, they had some seriously awesome food. But hands down their bread pudding was absolutely amazing.

Bread pudding is seriously one of those under rated desserts/breakfasts. No one actually realizes how amazing they are. Maybe they are turned off at the thought of it being soggy bread? But in reality it is no different than french toast! So just think of this thing as one big french toast hot dish (or casserole to all you non Minnesotans).

I was first in the mood to make cinnamon rolls but I absolutely hate waiting for yeast to rise. I know it’s seriously lazy of me but when a girl is craving something sweet, then a girl is craving something sweet. Then I got to thinking that I had bought some bread awhile ago and put it in my freezer because I’ve been wanting to make some bread pudding. Lightbulb, lets combine the two and see if it works. Add some bacon (yes I add bacon to my caramel rolls), and you have an amazing breakfast dish for everyone!

Ingredients:

1 (16 oz) loaf of french bread
2 cups heavy whipping cream
1 cup milk
1/2 cup sugar
5 eggs
1 1/2 tsp cinnamon
2 tsp vanilla
3-4 strips bacon, cooked and crumbled

Caramel Roll Topping:
1 stick butter, melted
1 1/2 cup brown sugar
2 tbs corn syrup

Directions:

Pre-heat oven to 350. Spray baking dish with cooking spray. In bowl combine your Caramel Roll Topping ingredients and spread on bottom of prepared baking dish and sprinkle with bacon. Tear your bread into 1 inch pieces and layer on top of Caramel. In medium bowl add your cream, milk, sugar, eggs, cinnamon and vanilla. Whisk until everything is combined. Pour over bread and let sit 5-10 minutes until it is saturated.

Bake uncovered for 1 hour or until top is brown and center is set. Let cool for a few minutes but quickly flip over onto serving dish so the caramel does not stick to bottom of pan. Spoon any remaining caramel and bacon back onto top of pudding. Serve and enjoy!
