I have finally came to the conclusion that I do not sleep enough. It has been an issue since I had my first-born 10 years ago. I literally can wake up to the sound of someone touching the door handle. It’s probably the natural motherly thing that happens but dang. I think I’m gonna be like this until they all reach the age of 18 and leave the nest. But knowing me then it will be too quiet and I’ll wake up to the sound of dust bunnies or something. For now, I think I’ll handle what I have. 

It was HOT in Minnesota today. Usually we catch hell for saying that because it’s a whole heck of a lot better than what will be coming in November! But then we will start complaining all over again then too. You can’t please us Minnesotans when it comes to weather. We are either too hot or too cold, never perfect. But maybe that’s just me. My husband says I’m very tempermental temperature wise, which I am. I love the heat but not when I sleep. I hate the cold but only when I sleep. I wonder if this has anything to do with me not sleeping….the world may never know.

Now back to talking about how it was hot today. I’m talking like 97 degree hot. When you go from the highs in the mid 70’s to all of a sudden a humid almost 100 it’s a big change here. Needless to say we were out playing on the slip-n-slide. And when that broke we moved onto the sprinkler. At least that kept everyone relatively cool. I was more worried about my son’s baseball game, luckily it started to downpour and cooled it off for them to actually not have to suffer, other than obviously paying in the rain, which I think they kind of liked.

Anyways, moving onto this sandwich. YUM. 3 meats, melty cheese and onion straws. Yes please. Now I got this inspiration from one of Applebee’s new sandwiches they have on their menu. Theirs didn’t have BBQ sauce which I had a tub of Lloyds sitting in my fridge from this weeks meat sale at our local grocery store and thought, hmmmm this would be awesome in place of the regular pulled pork. And heaven was born…..

Serving size- 2

Ingredients:

1 tub Lloyds Bbq pulled pork
4 slices bacon
6 slices sliced ham
1/2 cup shredded cheddar cheese
2 restaurant style buns or ciabatta buns
Onion straws (recipe to follow, recipe is large batch, use remaining straws as a side)

Onion Straws:
1 large onion
2 cups buttermilk
2 cups all-purpose flour
1 Tbs salt
A sprinkle or two of pepper
Seasoning salt
Oil for frying

Directions:

Start off by making onion straws. Slice onions into very thin rounds. Place in shallow dish and cover with your buttermilk, let sit for 1 hour. After it has sat, in deep fryer or on stove top (3 inches of oil) heat oil to 375. Meanwhile in medium bowl, whisk together the flour, salt and pepper. Dip your onion straws in to flour, shaking off any excess flour and placing them in hot oil. Fry in batches until they turn slightly golden and then remove to paper towel lined plate. Sprinkle with seasoning salt. Set aside.

Heat Lloyds Bbq as directed on package. In skillet, fry your bacon until no longer pink, remove and drain on paper towel. In drippings fry up your ham slices to get a little crisp on the outside, set aside.

To assemble sandwich layer first your ham slices the add your pulled pork then bacon top with cheese and finally onion straws. Serve with extra onion straws and get messy!
