Caramel Filled Churro Tots

FRIDAY! I love Fridays. The whole weekend home with all my loves. I love Saturdays even more. Wanna know why?? GARAGE SALES! Yup, we are one of those families that try to hit up garage sales every weekend. Sadly our state is not one where we are allotted mild weather all year-long. So once May hits and those garage sale ads start hitting Facebook and the newspaper I’m just itching to go. 

Speaking of garage sales. We are holding our very first one next weekend. See, I’m all new to the selling portion of it, but am a novice at the buying. So this next coming week will be busy getting things together and sorting and pricing. I’m probably thinking it looks easier than it is. Most likely next week you will see a post about me hating garage sales or how daunting of a task it is….this will be continued.

These little clumps of joy I cannot hate. Cinnamon, sugar…caramel. Um, yes please. Plus they’re fried. I think I’ve had this conversation before, anything fried = heaven, period. This batter is so easy to whip up! And you’re probably wondering how did I fill something so small! Well with 4 kids and many doctors visits I’ve saved up quite the supply of medicine droppers. TA-DA!!! Now the filling part can be a little time-consuming, but what you get at the end is totally worth it!

Ingredients:

Churros:
1 cup water
1 1/2 Tbs sugar
2 Tbs vegetable oil, plus more for frying
1/2 tsp salt
1 cup all-purpose flour

Topping:
1/2 cup sugar
1 1/2 tsp cinnamon

Caramel Filling:
1/2 cup caramel bits
1 Tbs milk

In deep fryer of on stove top (fill saucepan with about 1-2 inches oil) heat oil to 375. While that is heating in saucepan bring water, sugar, salt and oil to a boil. Once boiling add flour and stir until ball of dough forms. Remove from heat and let cool.

Transfer dough to piping bag fitted with a star tip (I didn’t have this) or a large plastic bag with the corner snipped off. Pipe the dough into about 1 inch chunks on plate. Carefully drop by batches into oil and fry until they are golden. Transfer to paper towels to let cool and drain.

Meanwhile, mix together the topping ingredients in shallow bowl, roll each of your cherr0 tots in and set aside.

To make the filling, in bowl combine the caramel bits and milk. Heat in microwave in 30 second increments until melted. Use your medicine dropper or anything else you have for filling and suck up the sauce. Gently push dropper into center of tots and inject with caramel. Repeat until all are filled! Serve with chocolate sauce or by itself!
