Cheesy Scalloped Fries

Well yesterday kicked off the first real week of summer vacation. It also kicked off me starting my summer daycare. Luckily as of yesterday all of our yard work is complete and the hazard area should hopefully be completely eliminated. Do you know what its like to have to make sure your kids don’t go in certain areas in your yard because of work being done? Especially when you are trying to do daycare, yeah it sucks. 

Luckily we found things to do to occupy our time that didn’t involve the outside aspect, besides, it was chilly and windy. Save the good stuff for another day. Today is supposed to kick off a pretty nice stretch of weather so we are looking forward to walks and the park and bike rides. Hopefully tagging along with these kids will give this gal some easy work outs for the summer!

Anyways, what a better way to kick off the first day than to what are now kid approved doctored french fries! These are so creamy and cheesy! Like I always say, cheese is the answer to all life’s problems. Especially when it’s in the gooey, melty version! This recipe is real simple and can be made ahead of time and reheated! This worked out real well because I made the night before and heated it up and everything was gone!

Recipe adapted from Just Get Off Your Butt and Bake

Ingredients:

4-5 large potatoes, peeled and cut into fries
2 cups heavy cream, I used 1 cup heavy cream and 1 cup half and half
2 cups shredded montery jack cheese
Salt and Pepper, generous amount
2 tsp dried parsley flakes

In 9×13 inch pan add your potatoes. Pour in cream and top with cheese. Sprinkle with salt, pepper and basil. Give a good stir until everything is nice and coated and mixed together. Cover with tin foil and bake for about 1 hour or until potatoes are fork tender and cheese is melted.
