So it’s the first official weekend since school has been out. It honestly doesn’t feel any different. My boy’s are already telling me they are bored by 10:00 am. I have a feeling this is going to be a long summer. Thankfully last year we moved into town from the country! I know a lot of people who would kill to live out in the country, not this gal. Yes, the privacy is nice, and the quietness is awesome, but it’s almost too quiet. I’m the type of girl who likes to go, go, go. Country didn’t suit me well because there never really was anything to see or do. Now with the conveniences of town I have access to other moms, a gas station, a restaurant, a pool and a park. Have you noticed how I used these words in the singular? That’s right, they have one of each of these things. My town = population 800.
Small town living isn’t too bad. I’ve grown up and lived in the same place my whole life, with the exception of moving about 15 miles away for less than a year. The sence of community is awesome, plus you pretty much know everyone! Alas one day I do aspire to move out west. Most likely to Washington or Oregon, just so pretty out that way. Until that day comes, travel is always fun! Tell me, anyone have any awesome vacation stories/destinations you’d love to tell me about? I’m always looking for my new adventure.
Until then, lets worry about another one of America’s best attributes. The good old burger. Who doesn’t love them? An official staple for the summer months. Heck, an official staple all year round! There are just so many things that you can do with them. So many different topping combinations that the possibilities are endless. So how on earth did I come up with this topping choice? I’m going to pay thanks to my mother on that one. If it wasn’t for her having me try one of these a while back I probably never would have even batted an eye if I were to see it listed somewhere. BUT, I’m so happy I did.
Peanut Butter Burgers are seriously like the perfect combo of savoy meets sweet. Add in candied bacon and you have that awesome addition of texture plus an extra dose of sweetness! Now I have listed my recipe in which I pan-fried my burgers, but this will work with the grill as well.
1 lb ground beef
1/4 cup parmesan cheese
1 Tbs milk
1 tsp parsley flakes
Salt and pepper
4 slices candied bacon (here is my recipe if you don’t know how to candy bacon)
In mixing bowl combine beef, parmesan, milk and parsley and mix until just combined. On a cutting board, roll beef mix into a log and section into 4 1/4 lb patties. Smash patties with your hand until about 1/2 inch in thickness and make an indentation in the center. Salt and pepper each side of burgers to your liking.
Heat your skillet or grill on medium-high and let heat up for about 3-5 minutes. Place patties in pan and let cook for about 5 minutes before turning. You only want to flip burgers once. Continue cooking for an additional 5 minutes.
Meanwhile, in small bowl add your peanut butter and microwave for about 30 seconds or until melted. When burgers are done, drizzle the peanut butter over the tops of each hamburger and top with 1 slices of bacon broken in half. Serve on buns and enjoy!
